Authentic fresh wasabi root (rhizome) is a treat. Most 'wasabi' that is available in stores and restaurants is actually horseradish with green food coloring added. Authentic wasabi has a cleaner, more vegetal flavor along with heat, and is perfect not just alongside sushi, but as a flavoring agent for everything from steak and oysters to salad dressings and cold noodle salads.
Wasabi leaves and stems have a milder heat than the roots and are traditionally made into a quick pickle called wasabi zuke, or blended into a spicy compote to accompany meats or other proteins. They have a bright flavor when used raw in salads, and can also be sautéed with a flavor similar to mustard greens.
