Fresh Alba White Truffle (Dog-Harvested, Europe)
Each truffle is approximately 14 g
Tuber magnatum pico, the Alba white truffle, is among the most aromatic and prized foods in the world. The aroma is intense and unmistakable: garlicky, earthy, and musky, with notes of aged cheese and honey. These truffles are found by trained dogs, which lead straight to the ripe truffle, a gentle and sustainable way to harvest.
How to use: Never cook them. Shave paper-thin over warm (not boiling) dishes just before serving, so the heat releases the aroma. They are best on simple foods that let them shine: fresh egg pasta with butter, risotto, scrambled or fried eggs, polenta, potatoes, or a mild cheese. A truffle slicer works best, but a sharp vegetable peeler will do.
Storage and care: Wrap the truffle in a clean paper towel, place it in an airtight container in the refrigerator, and change the paper towel daily. Brush off any dirt gently, and wipe with a damp cloth only right before using. Don't wash it ahead of time or freeze it.
First time trying one? A single truffle goes a long way. A little shaved over a simple dish is all you need, and the aroma is the real treasure.
